THE MAIN CLASSES OF NUTRIENTS

The main classes of nutrients are carbohydrates (including fibre), fats, proteins, minerals (including trace metals) and vitamins. Carbohydrates, proteins fat, fibre and some minerals are macronutrients (see Fig. 21.3). Vitamins and trace metals are micronutrients (Chapter 10).
